Q: Introduction of yourself and cafe
I am Nicholas, 31 years old, executive chef from Shugatori and part of the co-founder of Shugatori. Shugatori is a purely dessert café that serves toast, waffle, pancakes and some other pastries. Usually you can see those cafés which sell toast, they only sell toast, without other dessert but Shugatori serves a variety of desserts, and it is a place for everybody.

Q: Why is it named as ‘Shugatori’?
Shugatori is a Japanese name. Shuga means sugar, tori means bird, which is why there is a hummingbird in our logo. Hummingbird eats honey and honey is a sweet thing so it is relatable to pastry. Hummingbird is a very small and colourful bird same as our pastry, well presented in very fine plating.

Pastry, we don’t go for trend, we go for passion to do it. Without passion, whatever pastry you do it, it won’t come out exactly as what you want. As you need to measure every single ingredient when making pastry, if you measure wrongly or read the method wrongly, the pastry will definitely turn out wrong because whatever done is done.

Q: How did you start this café?
The café started since last year November. There are a total of 4 partners including me. At first, we planned to open a normal café but we have no idea what kind of café to start. Then we realized that pure dessert café is very rare in Malaysia so we implemented this idea in order to cope with the niche market.

Q: What is the theme of the café?
Minimalist in nature. Our café is very clean and simple.

Q: What is your philosophy when it comes to cooking?
For me, I emphasize on the taste and the presentation of the pastry. I make sure the standard is there before sending it out to the customer. I hope my customer enjoy my dessert and this is what I want.

Q: What is the specialty of this café?
The main thing is Yin and Yang waffle which is the black and white waffle. On top of that will be chocolate sauce with cookies and cream ice cream. In Malaysia I think we are the only one that make this kind of toast. The idea comes from my partner who saw the billboard of handphone Hua Wei in black and white and he suggested that why not we implement this into our toast.

Q: What is the most enjoyable moment while doing this business
When I see people enjoy the dessert, that is the best thing for me. Because as a chef, we love people who enjoy our food and that’s what keep us motivated.
